While traditional basket presses still exist in Rioja, the pneumatic press is a hallmark of modern, high-quality winemaking here. It’s especially important for crafting expressive white wines, where precision and delicacy matter most. This gentle approach gives winemakers the control to create those distinctive “signature” bottles that define today’s Rioja.
